Būche au Saumon (Salmon Log)

Ingredients |
| 1 Can (15 oz) Salmon, drained 8 oz cream cheese at room temperature 1 tblsp. lemon juice 1 tsp. horseradish 1 cup pecans, chopped 2/3 cup fresh parsley (chopped) or 1/4 cup dry parsley salt & pepper |

Preparation |
| Remove salmon skin & bones & break into little pieces with a fork. Set aside. |
| Put cream cheese in a bowl & beat with lemon juice & horseradish. |
| Add salt & pepper to taste. |
| Gradually add the salmon until the mixture is smooth. |
| Refrigerate for 1 to 2 hours. Shape the cheese mix into a log (I do two). Put the pecans & parsley on the work surface & coat the log(s) by rolling in the ingredients. Wrap the log in aluminum foil & refrigerate until serving. Put the log in a service plate with crackers and toasted bread pieces around it. Can be done the night before. Stephanie Rousseau 2007 |
